Naturally Colored Red Velvet Cupcake
This is my first red velvet cupcake. It`s not red like other red velvet cakes, because food coloring is a no no for me. I substituted the red coloring with natural beetroot juice. So it came out not red at all, and not very chocolate either ;) The best part however, it turned out to be the fluffiest cake I made so far. Despite that I reduced considerable amount of sugar from the original recipe, it came out delicious. Although it tastes great without frosting, next time I`ll make a cream cheese frosting to top it, otherwise the cupcake looks too naked for the eyes.
It came out very clean at the bottom too ;p
